Taco Dip – PaleOMG


Can we pause for a second to realize that it’s already September? I’m not sure about your situation, but my summer was practically non-existent this year. The most thrilling thing I managed was spending a night in a hotel with room service. Our usual summer travels and outdoor meetings were canceled thanks to Covid, and now here we are in September, expected to celebrate Labor Day… the symbolic end of summer. What is going on? It’s such a bizarre time we’re living in! Remember when our biggest worry was how many burgers to grill for the Labor Day BBQ? Now we’re concerned about potentially transmitting a life-threatening virus during that BBQ. Crazy times, right? But we’ll push through! And to kick off the weekend, let’s whip up some taco dip and aim for that sense of normalcy!

This recipe features beans again. Yes, I’m aware beans aren’t considered paleo. But since they have found a spot in my current diet, I’m sharing these new family recipes HERE, too! What’s on your agenda for Labor Day weekend? As for us, absolutely NOTHING! I recently made a Fruit Pizza, which I’ll be posting on the blog this week, so I might share that with my household. And by household, I mean my husband and my sister-in-law who visits every week. If Jackson didn’t have kidney disease, he’d get a slice too. I follow this adorable Frenchie account on Instagram where the owner and their dog try new foods together every day. They enjoy pizza, breadsticks, pineapple, apples, broccoli, sushi…with chopsticks! This dog is living the dream and is quite spoiled! Do I wish I could treat Jackson to pizza? Of course! But he has to settle for red bell peppers most of the time. Occasionally carrots, and cucumber, too. Not exactly living his best life, but he’s getting by! That’s what counts, right? Right.

  1. In a large skillet over medium heat, cook ground beef, onion, and red bell pepper. Crumble the meat into small pieces. When it’s almost done, add the taco seasonings, salt, and lime juice, stirring to combine. Once cooked fully, set aside.
  2. Blend refried beans, green chiles, salt, and broth in a blender or food processor until smooth.
  3. In a baking dish, layer the refried beans at the bottom. Top with ground beef mixture evenly. Add layers of guacamole, sour cream, iceberg lettuce, pico de gallo, black olives, pickled jalapeños, and cilantro on top.
  4. Chill and serve with grain-free tortilla chips!
