Ingredients

  • 4 slices Italian country loaf bread
  • 4 slices Cheddar cheese (or to taste)
  • 4 slices cooked bacon
  • 4 slices room temperature cooked meatloaf (or to taste)
  • ½ cup curry-tomato relish (see recipe)

Directions

Start by placing two slices of bread on a clean, dry surface. On one slice, layer two pieces of Cheddar cheese, followed by two slices of bacon. On the other slice, place two slices of room temperature meatloaf and top with a dollop or two of curry-tomato relish, spreading it evenly. Carefully close the sandwich and repeat to create a second sandwich. These can be made ahead of time; just wrap in plastic and refrigerate.

When you’re ready to grill, use a pastry brush to generously apply melted butter to both sides of each sandwich, making sure to cover the edges.

Preheat a large non-stick or cast iron skillet over medium heat. Place the sandwiches in the skillet, cheese side down, and sauté for 2 to 3 minutes, or until they are golden brown. Move them around gently during cooking for even browning. Flip the sandwiches and repeat the process. Avoid overcrowding the pan; work in batches if needed.

Slice the sandwiches diagonally and serve warm.
