This dish is truly simple to make. Inspired by a recipe from Ina Garten, which used fish instead of chicken, I’ve personally found that chicken works better. After some trial and error, I was determined to create an EASY, flavorful, and juicy chicken dish perfect for busy weeknight dinners. And here it is!
This recipe is also great for meal prep! You can easily prepare it in advance and bake it when you’re ready to eat. Just follow the steps below: season the chicken breasts, whisk together the sauce, pour it over the chicken, cover, and refrigerate until it’s time to bake. I absolutely love recipes that allow for advance preparation—perfect for those hectic evenings!
I paired this scrumptious meal with broccoli, but it would also taste fantastic over noodles. The sauce is bursting with flavor and deserves something to soak it up! Crusty bread would be fantastic for dipping as well!

Creamy Mustard Baked Chicken

Ingredients
- 3 chicken breasts, halved to make 6 thinner pieces
- 8 ounces of creme fraiche
- 3 tablespoons of dijon mustard
- 1 tablespoon of whole grain mustard
- 1 shallot, finely minced
- 1 clove of garlic, minced
- 1 tablespoon of drained capers
- 1 tablespoon of sugar
- Salt and pepper to taste
Instructions
- Preheat the oven to 400 degrees. Season both sides of the chicken breasts with salt and pepper, placing them in a 9×13 baking dish.
- In a bowl, combine the remaining ingredients and pour over the chicken. Bake uncovered for 20-25 minutes or until the chicken is cooked through. Broil for an additional 5 minutes if you want a nice color on top – this step adds a lovely touch! Garnish with parsley and serve with roasted vegetables or over noodles.
Notes
Cutting the chicken breasts in half is highly recommended, as thicker pieces tend to overcook.
