Cheesy Loaded Meatloaf Casserole

Ingredients

  • 3 cups leftover garlic mashed potatoes
  • 1 pound lean ground beef
  • 1/2 cup finely chopped white onion
  • 3 cloves minced garlic
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1 cup Italian breadcrumbs
  • 1 large egg
  • 1 1/2 cups grated sharp cheddar cheese
  • 1/3 cup cooked and crumbled bacon or bacon bits
  • Kosher salt and freshly ground pepper to taste

Instructions for Making Cheesy Loaded Meatloaf Casserole

  1. Preheat the oven to 400º F.
  2. In a large mixing bowl, combine the ground beef, onion, garlic, brown sugar, and Worcestershire sauce using two forks or your hands.
  3. Season generously with salt and pepper, then mix in the breadcrumbs and egg.
  4. Transfer the beef mixture to an 8-inch square baking dish and press it down into an even layer.
  5. Spread the mashed potatoes over the beef mixture, followed by the cheddar cheese and bacon bits.
  6. Cover the dish with aluminum foil and place it in the oven. Bake for 30 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
